Hearty, Satisfying Cabbage Pie Perfect for Gathering the Entire Family
Birgit Freudenberg, a renowned German cookbook author, has recently published a recipe collection that includes a delightful vegetarian dish - the Cabbage Pie. This dish, with its two layers of flaky dough and a savoury cabbage filling, is a must-try for anyone looking for a hearty vegetable-based meal.
To start, preheat your oven to 180°C. Line a baking form with parchment paper.
For the dough, sift 1 cup of flour and 1 teaspoon of baking powder into a large bowl. In a separate bowl, whisk 4 eggs with a pinch of salt until they are well combined. Gradually add the whisked eggs to the flour mixture, stirring to form a smooth dough.
While the dough is resting, shred 300 grams of cabbage and sauté it until it's soft. Boil 4 eggs, let them cool, and finely chop them.
Combine the sautéed cabbage, chopped boiled eggs, and 350 ml of kefir in a separate bowl.
Pour half of the dough into the prepared baking form, spreading it evenly. Spread the cabbage filling on top of the dough. Carefully pour the remaining dough over the filling, ensuring it covers it completely.
Bake the Cabbage Pie in the preheated oven for 30-40 minutes, or until the top is golden brown.
